A little goes a long way for flavor
When can babies eat truffle?
Truffle can start once your baby shows readiness for solid food, at about 6 months. It grows underground on tree roots and is one of the priciest mushrooms in the world. It is used in tiny amounts to add a strong savory flavor.
Part of the cost comes from scarcity. Very few truffle farms exist and most truffles are foraged, often with the help of trained dogs or pigs.
Truffle brings a little protein, carbohydrate, fiber and essential fatty acids. It also has phenols, carotenoids and antioxidants, which research links to immune and antibacterial effects.
Foraged mushrooms
Buy mushrooms from a trusted source. Do not serve wild-picked mushrooms unless a mycologist has confirmed they are safe, since poisonous look-alikes are common.
How do you prepare truffle for babies?
A little is enough
Truffle is a flavoring, not a main ingredient. Grate it or shave it very thin over a warm dish. It comes fresh, dried, as oil and as butter, and you can try any of them in cooking.
Raw truffle is fine to eat. It needs a thorough cleaning first.
Preparation by age
The same food is served differently at each age. What matters is how your baby sits, grasps and chews, more than the calendar.
6 months
6 months · How to mix into mealsmash
Fold a pinch of finely grated or paper-thin truffle into a soft meal such as pasta, polenta or porridge. You can use dried truffle to flavor the water for cooking grains and pasta, or grind it to a powder and sprinkle it over food. A few drops of truffle oil over porridge, purée or finger food will also do. Truffle is pricey, so other dried mushrooms can give a similar savory depth.
12 months
12 months · How to prepare grated or shavedcube
Add fresh or dried truffle, grated or thinly shaved, to your child's meals. Truffle butter and oil are fine to use as you like. Clean the truffle well first. Raw grated truffle is fine.
Is truffle a choking hazard for babies?
Choking risk: low
Low risk when finely grated or shaved. Avoid thick chunks.
Truffle is low risk when prepared to suit your child's age. Every food carries a small chance, so grate it finely and stay close during meals.
Is truffle a common allergen?
Truffle is not a common allergen. Mushroom allergy is rare but does happen. Rashes and anaphylaxis have been reported in people who handle mushrooms. Mushrooms also hold chitin, the same carbohydrate that shellfish and insects contain.
People with pollen food allergy, especially those sensitive to mold, may react to mushrooms too. The reaction is usually short-lived itching in the mouth, and cooking lowers it.
Dried truffle may be preserved with sulfites. Sulfites are not a common allergen but can cause allergy-like reactions in people with asthma. On labels, look for names such as sulfur dioxide and sodium metabisulfite.
First try
As with any new food, start with a small amount for the first few servings. If there is no reaction, increase it gradually.
